I think every Friday should be national salsa and margarita day… after a hard week of work there is nothing like chillin out to something relaxing. Here is how we do our Salsa. I’d love to hear how you make yours! Please share!

Ingredient:

About 6 Tomatoes

Half a White Onion

One Bunch of Cilantro

Few Jalapenos (Depends on how hot you like it)

3 – 4 (or more) cloves of garlic

Half a lime (Juiced)

Salt (As much or little as you’d like)

Directions:

Boil the Jalapenos until they are soft. Then take the onion, cilantro and one tomato and pop them in the food processor to get the party started. Blend for a few seconds until everything is chopped up. Next, cut up the remaining tomatoes and add them along with your garlic, salt and lime juice. Make sure to take it easy on the salt…you can always add more. Next, add a few Jalapenos and blend! Blend until your desired thickness and then taste! You may need to add more salt, jalapenos or lime depending on your taste. I recommend letting your final creation sit in the refrigerator for a day for the flavors to marinate with each other.

I had left over lemon juice and zest so I decided to experiment and create some toppings. Combining water, lemon juice, sugar and lemon zest brought it to a boil and made a lemony syrup. I also made a zest sugar mixing some lemon zest and sugar what a perfect cupcake topping and so simple.

So, I was in the grocery store with my son and we were looking at the frozen cinnamon rolls as a Super Bowl morning breakfast treat. I saw the frozen Monkey Bread and it looked small and expensive. I told my son that it’s really easy to make, has only 5 ingredients, would be cheaper, and would probably taste better.

So we went to the refrigerated dough section and low and behold, the Pillsbury biscuits had the recipe on the back of the package….which was conveniently packaged as a 4-pack, the amount you need for the recipe.

It’s really is easy to make and would be a fun recipe for younger kids to do. D-E-L-I-S-H!

Question – Why do they call it Monkey Bread?

Monkey Bread

INGREDIENTS:

3/4 cup granulated sugar

2 teaspoons ground cinnamon

4 cans (7.5 oz each) Pillsbury® refrigerated biscuits

1/2 cup butter or margarine, melted

3/4 cup packed brown sugar

DIRECTIONS:

Grease or spray 12-cup Bundt cake pan

Mix granulated sugar and cinnamon in 1-gallon bag

Separate dough into 10 biscuits; cut each in quarters

Shake quarters in bag to coat; place in pan

Mix butter and brown sugar; pour over biscuit pieces

Bake at 350°F for 40 to 45 minutes or until golden brown. Cool 5 minutes. Turn upside down; pull apart to serve. Serve warm.

Life is full of important things… family, bills, Velveeta, your job, and for many FOOTBALL! Lets not forget the wonder that is a Mini Crock Pot. An amazing little kitchen appliance that works perfect for snack foods such as mini-wieners with Head-Country, queso cheese and other warm dips that we all love.

This is a perfect item to add to your list for the Super Bowl foods! It is truly delicious and really easy to experiment with.

We did not really measure anything out because it really is not necessary.Just make sure you fry up the Sausage roll before you add it to the cheese. See the pictures below.

We added:

Lots of Velveeta

A Little Milk

Half a Can of Rotel … or more

Some Fresh Cilantro (Yum)

Sausage Roll (Add as much as you like, over time we ended up adding the whole thing as we added more Velveeta)

I took a bell pepper filled it with chickpeas, diced tomatoes, sliced jalapenos, parsley minced garlic and olive oil. If you like garlic load it on. Bake them for about one hour and 10 minutes at 350 degrees. It was great and very filling.

One thing I love about making soup is that it always ends up being special. I will never forget the story that one of my elementary teachers told me about Stone Soup. As you may know, the story is about a soup that started off with simply water and stones and as people passed by the maker of the soup to see what he is doing, each person ended up adding a special ingredient of their own until the soup became a community production.
