For some people, comfort food is a steaming bowl of fluffy mashed potatoes. For others, it’s a gooey, gloppy mess of macaroni and cheese. I like my comfort food on the spicy side. Enter Casa Laredo.
In its third incarnation, Casa Laredo is a cozy but uncluttered spot, smack dab in the middle of downtown. Its wall of windows make it seem modern and breezy, but the Mexican painted tiles and homespun artwork evoke feelings of familiarity. It’s déjà vu all over again at Casa Laredo’s new downtown home.
The food is as before ’ and in some cases better. Complimentary tortilla chips ’ served with a thin, red salsa ’ are less greasy and crisper than before. The chile verde (a specialty of proprietor and hostess-with-the-mostess, ’Ms. Edith’ Rojas) is sublime. Imagine chunks of pork cooked until buttery, enveloped in a flavorful brown sauce. Yeah, I know that verde means green, not brown. I can’t explain it, I just like it.
Ms. Edith’s offerings are homey, heavy and cheese-laden. They’re well-spiced and sometimes a tad bit greasy, but pair exceedingly well with a margarita or Dos Equis. The closest thing to ’light’ on the menu is the Chicken Tacos Paisanos, incredibly flavorful white meat sandwiched in flour tortillas with lettuce, cheese and tomatoes. Substituting whole beans for the pedestrian frijoles refritos is a good choice not just for dieters but for all with discriminating palates.
Food isn’t the only comfort served at Casa Laredo. Perhaps it’s not even the main draw. Generations of Tulsans have gobbled up Ms. Edith’s offerings at her previous locations at 41st & Peoria, and later, in the Farm Shopping Center. The Mexican comfort food beckons, but so too does the warm welcome that Ms. Edith, her brother Guillermo, waiter Tony and the rest of her fine staff never fail to provide. A meal at Ms. Edith’s is how I’d imagine Thanksgiving at home, had I been born in central America. Except I don’t have to do the dishes.

Casa Laredo Rules !
BTW, grease equals flavor. Certainly there can be an excess of grease; but if you take all the grease out you have food which is often not very tasty.
To Edith and Guillermo:
Don’t change your food preparation. Not much, anyway. Please.
