Very Californian Baja Quesadillas

We went to Baja Jack’s Burrito Shack. I had the the quesadilla with guacamole and my husband had some kind of wrapped up chicken and a salad that didn’t look like a salad to me – beans and corn etc. Mine was delicious but I anticipated from years of experience that my husband would not like the food. He travels the globe and rarely likes anything we eat dining out. Boy was I surprised when he said it was wonderful – he especially loved the strange (to me) little salad. His comment was that it was all very Californian. I don’t know about the California part but the food was great and I’m an Oklahoman through and through.

    My girlfriend and I visited today for lunch. The staff are wonderful, especially helpful is the manager, Tequila! The concept of building your own burrito is a fantastic one. While not new it is great to see a LOCAL restaurant with the concept. There’s something special about knowing the money you spend at an establishment stays within the community and not funneled off to an out of state corporate headquarters.
