Tavern and Fassler Hall compete in nationwide “Blended Burger Project”

The James Beard Foundation recently launched a nationwide challenge for chefs to compete in Their Blended Burger Project™. As described by the foundation this is designed as “a movement that strives to make burgers better by blending ground meat with chopped mushrooms, creating an incredibly delicious patty that’s healthier for your guests and more sustainable for the planet.”
The Tavern and Fassler Hall have been invited to participate in this project and their truly delicious are available every day as off menu items through July 31st. Here they are with links to the voting page!
The Tavern’s Banh Mi Burger

The Tavern’s executive chef, Ben Alexander, is offering a (quite tall) – Banh Mi Burger.  This goes down as the most health conscious burger (that still contains beef) we’ve ever experience.  Chef Ben takes a roasted shiitake mushroom and lemongrass reduction and combines it with their house beef blend in a 50/50 ratio. Then the beef/mushroom patty is topped with pickled daikon radish, carrot, cucumber, fresh jalapeño and cilantro. But, that’s not all. Chef Ben has perfected a house made fish sauce caramel “umaminnaise” that tops this mountainous burger and pulls it all together. Presented on a house made brioche bun, this burger is one of a kind and not to be missed!

Fassler Hall’s Bierock Burger

Fassler Hall is offering a special burger creation by Brian Fontain, a Bierock Burger. This unique and tasty burger will be unlike any other burger you’ve tried, unless you are very familiar with german cuisine. A Bierock which is dish brought to the United states by German/Russian immigrants in the late 19th century. Traditionally, a bierock is a pastry stuffed with ground beef, cabbage, and onion. Fassler Hall’s take on this dish was to blend bison with cremini mushrooms then combine  the blend with shredded cabbage, green onion, and leek.  Finally, all that goodness is stuffed into their house made sourdough pocket and baked to literal perfection. It doesn’t get more savory than this!
