Vegetarian Snow Day Meal
I am a vegetarian and never see anything vegetarian on TulsaFood.com so figured I would send in what I had today.
I took a bell pepper filled it with chickpeas, diced tomatoes, sliced jalapenos, parsley minced garlic and olive oil. If you like garlic load it on. Bake them for about one hour and 10 minutes at 350 degrees. It was great and very filling.
