    Under 40 Dining Event at Polo Grill March 7th 

    March 7th Polo Grill will hosting our monthly Under 40 dining event. We will be featuring 3 Courses of Zesty and delicious Creole/Cajun food in celebration of New Orleans and Mardi Gras, as well as showcasing Abita beers. The event will be hosted by Chef Michelle Donaldson and Jennifer Sharp of Republic. The cost is 35$ and seating is limited.

    American Culinary Federation (ACF) Annual Chef’s Ball – Get Your Tix Now! 

    The Tulsa chapter of the American Culinary Federation (ACF) is proud to celebrate our 35th Year with our annual Chef’s Ball, March 23rd, 2011 at 6:30 pm in the new Tulsa Ballroom at the Tulsa Convention Center.

    “This year, we’ve really pulled out all the stops” Says ACF President, Kenny Wagoner, “We’ve got a fantastic venue in the new ballroom and Chef Levine has blown us away with his menu selections”

    T his event is open to the public, so it’s a great opportunity to rub elbows with the stars of the Tulsa dining scene! Long time ACF member and certified Executive Chef, Devine Levine has developed an outstanding five course menu this year, to include Roasted Spring Vegetable Timbale, a Crispy Duck Strudel, Bosc Pear, Stilton and Arugula Salad, A Porcini dusted Tenderloin and a Braised Veal Cheek and a Chocolate-Gran Marnier Marquise for dessert! Dinner will be preceded by a cocktail hour with sumptuous passed hors d’oeuvres. Wines for the evening have been carefully selected by sexy sommelier Jeanne Wilson of Tulsa Hills Wine Cellar. Tickets are just $100 per person or $900 for a table of ten, space is limited. There will be a live and silent auction with many exciting items including private dinners provided by area chefs. All proceeds from the evening benefit the ACF Scholarship fund for culinary students. This is sure to be a grand evening, formal attire is recommended. Entertainment will be provided by local jazz ensembles for both your dining and dancing pleasure.

    Manifesto Wine Dinner at Local Table Feb. 8th 

    Here is an update from Local Table Restaurant in Tulsa. This info comes from their email newsletter.

    We have an awesome wine dinner this Tuesday February 8th. The owner from Manifesto and Whetstone wines, Jamie Whetstone is coming to speak at this wine dinner. Our good friend Scott Large and Jamie will be doing a meet and greet from 6:30 to 7 to talk and try his flagship Whetstone wines, then sit down for dinner and have a 4 course dinner with wine.

    This is a must, Jamie is one of the best wine makers in California. His wines are great and the food will match perfectly. The menu is below, see you there.

    “Manifesto! CEO and Winemaker Jamey Whetstone grew up in the deep, deep Southeast. Before his restaurant career could grind all the sweet edge off life—like surfing and, well, living—Jamey quit and turned his enthusiasm for wine into a life where working and passionate edge are one in the same. From the bottom rung as a “cellar rat” at Turley Wine Cellars, Jamey quickly found his footing in the wine world. He became assistant winemaker at Turley, worked at one of Burgundy’s leading wine houses, Domaine Dujac, planted 30 acres of hillside vineyard, learned Spanish, and founded Whetstone Wine Cellars and Whetstone Consulting. Then, because he had too much time on his hands—not likely—or because he wanted to make great wine that everyone could afford, he co-founded Manifesto!.

    Chipotle Shrimp Tostadas

    Wine-Manifesto Sauvignon Blanc
    Super floral nose of Paper Whites and peaches, pink grapefruit, papaya, Meyer lemon, and a hint of cut herbs. Bold mouthful of pink grapefruit, orange creamsicle and papaya finishing long and bright with flavors of lime, peach and orange zest.

    2nd Course
    Lentil and Wild Mushroom Shepherd’s Pie with Roasted Garlic Mashed Potatoes
    and Cabernet Mushroom Sauce

    Wine- Manifesto Cabernet Sauvignon
    As alluded to above, our two sites act as a kind of yen and yang to one another: abundant flavor in one and massive but defined structure in the other. In the nose, the 2008 Cabernet jumps out with bold, heady aromas of right-out-the-bramble blackberry, wild strawberry. A wild yeast fermentation keeps the aromas pretty wild themselves, and the slightest kiss of new oak (6 barrels out of 140) provides a little vanilla as well. The aromas carry over into the mouth, where they are complemented by currants, blackberry, cigar-box tobacco, and a touch of minerality we think of as ‘pencil lead’. All this is framed by a structure of harmonious acid and fine, seamless-but-pronounced tannin that we are very proud of—the wine reads as something much fancier than its presentation

    Duck and Andouille Sausage Gumbo

    Wine- Manifesto Zinfandel
    Ruby red in color. Nose full of red raspberry, bright cherry, blackberry, and plum with secondary aromas of orange peel, rose petal and asian spice. Mouth full of ripe cherry, raspberry, blackberry, and stone fruit. Long finish with secondary flavors of blackberry pie and a hint of baker’s chocolate.

    Lessons in New Creole from Chef Cody Stell of Doc’s Wine & Food 

    Tuesday January 18, 2011, 6:30pm: It’s “New Creole” food and pre-prohibition era cocktails with Chef Cody Stell from Doc’s Wine and Food in Brookside! Dishes that Chef Cody will demo and serve the audience include Doc’s famous Shrimp and Grits, Grilled Oysters and Bananas Foster Bread Pudding.     The Zuits are a local Tulsa swing, jazz, funk, and Latin band comprised of ten members that will be playing tonight (Friday Jan 14th) at Joe Momma’s Pizza in Downtown Tulsa. Joe Momma’s always hosts local bands!
