Beanitos, The New Tortilla Chip?

We recently received a few bags of Beanitos chips in the mail from our buddy Jeff. (Anyone who sends me free food is a buddy of mine). Jeff told us that Beanitos are awesome for dipping. Just like normal chips but much healthier and tasty at that. I immediately knew what I wanted to do with my Beanitos. I wanted to make a dish that I frequently crave but never really get…NACHOS. I freakin love Nachos, and Beanitos made it happen for me tonight. I know this may not be the healthiest way to enjoy Beanitos but gosh, they were so good. I think I had about 3 servings. The idea with these Beanitos Nachos is that they weren’t really your traditional nachos with corn chips. It was like a big pile of beans with cheese, chicken, jalapeños, cilantro and pure deliciousness. Frankly, they are quite delicious. Try some for yourself!

After this whole experience we have come to the conclusion that yes, Beanitos could definitely replace tortilla/corn chips in my life.  For me as the base in this supremo-nacho dish, they were pretty darn good.  Now all they need to do is come up with a Buffalo-Style Ranch and a Flamin Hot bag and I’m sold for life.

Casually Grubbing Some Beanitos Nachos

About to Make Some Nachos with my Beanitos Chips

Beanitos chips are made with whole beans – either black or pinto. After washing the beans, they are combined with whole grain rice and whole brown flaxseeds, baked and flash-fried in vegetable oil then lightly dusted with sea-salt. They are low glycemic, and are gluten, wheat and soy-free. Not to mention high in fiber…you know what that means!

Our Beanitos recipe was very simple:

Ingredients:

Beanitos Chips
Velveeta Cheese
Rotel and topped
Shredded chicken
Cilantro
Jalapenos

Recipe:  First start out with a layer of Beanitos chips.  Melt the Velveeta and Rotel in a skillet on the stove. After melted, top chips with cheese mixture.  Now add chicken, cilantro and jalapenos to taste.
