Tuesday’s OKfoodie was a collaboration of two awesome chefs after Chef Vincent LaTouche had a family emergency and has had to reschedule.
OKfoodie veterans Chefs Jason Kendrick Vaughan and Kurt Fichtenberg stepped up and delivered a three course meal that was fit for a celebrity. In fact all three dishes are actually celebrity favorites, each paired with wines from Whiskey Business.
The meal started with Chef JV’s Brie wrapped in puff pastry and served with a fresh apricot chutney. The soft, double cream brie was cradled in the delicate pastry. The sweet, fruity chutney was a great contrast to the soft savory cheese. Paired with 2011 Irony Monterey Valley Pinot Noir, this course is a favorite of Tom Hanks.
The entrée, prepared by Chef Kurt Fichtenberg was a chicken roulade or roll stuffed with a savory combination of spinach, Capicola ham and sour dough bread. A rich smoked Swiss Mornay sauce, accented with a little fresh nutmeg made a tasty bed for the chicken. It was paired with a 2011 Bodini Mendoza Chardonnay is a favorite of former First Lady, Barbara Bush.
The last course, prepared by Chef JV was Strawberry Sorbetto with Mango Coulis. The luscious fruity sorbetto was donated by Mod’s. Chef JV’s coulis added texture and more sweetness to this light, but satisfying dessert. It was paired with a sparkling Spanish Cava by Cordoniu. This dessert is a favorite of Vivica Fox and Candyland.
